I read that NIRS can measure the pH, and cytochrome.
This is possible with Moxy, or require more advanced equipment?

Moxy does not measure Cytochome or pH.

Cytochrome does have a NIRS signal that is theoretically detectable but it is much smaller than the Hb and Mb signals.  I am not aware of any commercial devices that actually measures cytochrome.

All of the work that I've seen on pH uses "multivariate calibration techniques".   This is where some change in NIRS signal is correlated with changes in pH.  Hydrogen ions don't have a useful NIRS signal so most likely the correlations that are observed are more related to Hb and Mb oxygenation instead of pH directly.  The correlations might work well over some range of conditions but might be completely wrong in other conditions.
